easiest way to cook spare ribs with tausi

   Been trying hard to cook this dish base on some cooking tip at google and the result is not great. The dimsum houses actually never use spare ribs but uses pork belly or liempo (in Filipino)

Ingredients
     I uses Singapore Seah's Steam Pork ribs spices, Corn starch, black beans (crush), sili haba and Pork belly skin remove and chop into bite size pieces. If you use spare ribs and steam it; it's a bit tough


     I don't use measurement but by estimation. add the crush black beans and the Seah's spice (there will be some big pieces of the spice so you have to crush it before rubbing it ) on the pork belly, rub it well in the meat. Add the spice mix when you think that the meat is not well coated with the spice.  After rubbing add corn starch in order that the spice mix stick to the meat then add the chop sili (if you like it hotter add some more) and mix again. I once tried the red pepper flake but it lack the smell of the sili haba or green chili.

     Steam the meat around 15-20 minutes or until cook.  You will notice that there are some juices at the bottom of the plate. This is the purpose of the corn starch so that the spice mix will not totally fall down the plate.  Gurantee your kids will love it mine does.

Wedding at Edsa Shangrila


       It was my cousin daughter wedding at Edsa Shangrila on October 29, 2016. Below is outside the Isla Ballroom where guest waited it out while the personnel of Edsa Shangrila is still fixing inside


           While waiting for the ballroom to open there are coffee and canape given to guest.


     There was also some pica pica like salted duck egg chip, pretzel, and Lechon (came from samar with compliment from the father of the bride) and some juice while waiting for the ballroom to open  Did not take any picture of it because there are already a crowd of people at the snack bar

shaved parma ham, sundried figs, arugula leaves toasted almonds with balsamic vinaigrette

The Dish was refreshing especially the fig, it did not look liked sun dried but this is the first time I tasted a fig and it was delicious. The aragula leaves were not that bitter as some people say. The pharma ham is also good and not a bit salty.
                                                                                     
Forest mushroom soup served with whipped chantilly cream and cheese straw

     When the soup was brought to the table my:first thought that it was a pretzel stick since there is no cheezy taste. The mushroom soup is superb is there in no strong mushroom taste and creamy. Since there are many type of mushroom what type did they use?  Have tried many mushroom soup some mention wild mushroom which has a strong taste.

Toasted Sesame Codfish with Linguini aglio olio with citrus cream
     The Codfish was flaky, adding the grill lemon was even better except the flavor of the lemon will retain in  your hand.  Dish is super delicious but everyone said the serving of the pasta is too small like just a spoonful only.

Roasted Beef Tenderloin with potato cheese gratin, glazed carrots and Rosemary jus with mushroom

The Beef Tenderloin was medium rare and tender the potato cheese gratin was cook well and delicious except the carrots a bit tough since not all the guest are young that have strong teeth to bite to it.

     This last dessert was creamy and the  brandy snap very crispy. Some chef put the design as sauce but this chocolate sauce was too thick that you cannot spread it on the ice cream

     The last one on the list was either coffee or tea since it was already  late in the evening we did not wait for it.

     The entry to the mall parking is already close and you have to walk very far to go to the parking place. If you want to park at the hotel most of the valet will tell you that the parking is full in order to get additional amount of P100 as their fee.  Parking at the Edsa Shangrila start at P100 for the 1st 3 hour and succeeding hour will cost P90.00. If on a budget the mall parking has a flat rate of P50

old school versus new school of having baby at Cardinal Santos Medical Hospital

     Last may 5,2016 my daughter ob-gyn ask her to go check in at cardinal when she was not yet in labor. Went to the delivery room for check up and later ask me and my son in law to book a room.

     Next day they wheel her again to the delivery room to induce labor which took a whole day, which my son in law keep asking the nurse staff what's gooing on, which they gave him a number that cannot be connected to the delivery room. Since I still have some work to do I make a call and updated him. When I drop by the hospital around 6pm (since I commute by bus to the hospital) I went straight to the delivery room and told them that that the husband is worried so they said that they allowed him to go in.

     And around 8:30pm they decided to make a C section because of baby position.  The only problem with Cardinal Santos believe in breastfeeding they don't sto k some formula in their pharmacy for mother who has C section. Since I left the hospital almost 10 pm. My son in law whomis a foreigner is not acquainted with the place has to google to dind mercury drug store nearby and he cannot leave anything valuable in the room since my daughter has been stolen a phone in cardinal Santos when she was taking care of her eldest sister there. What if all drug store are close will they let the baby go hungry? Theyneven use a cup to feed the baby.

     When the baby was born I told the people at the delivery room that we wanted the baby to circumcise so that he will not feel the pain when he grow up. For 3 day they ignore it. since all my son were circumcise when they were born. The only thing lacking is that they say it straight to my face that they don't believe in doing so, whi h is against the Department of Health to have your kids to be circumcise to have a clean penis,

      So what we know in the past of waiting to have either labor pain or your water broken then we should rush to the hospital. Or is about money? Not even stocking some small can of formula milk in the pharmacy since not all birth are natural will they leave the baby hungry until the anasthesia worn off from the mother then feed the baby? Are they planning to make extra charges in the future to have the kid circcumcise? since the baby skin is soft it's much easier to cut and since the baby is still in the hospital they can take care of the wound.

     So parent if you know your baby is a boy and you plan to have them circumcise find another hospital. Find a hospital where there are nearby drugstore in case you need to buy the baby formula in the middle of the night. And also a reminder grandparents are not allow to see the baby at Cardinal Santos including the delivery. So if the husband is away poor wife and baby have to wait until they are wheel to their room

1 Can Sexy Chix makes 3 complete dishes to enjoy


What is the best choice to use from Sexy Chix?  I guess it's the one in Broth that has a lot of option to use and in neutral flavor. And the best recipe is the  A La King.


Ingredients:
 1 cup cook rice
 1 tbsp Magnolia Gold butter (Lite)
 1 tbs. Magnolia Old Purpose Flour
 1 tin Sexy Chix (in Guiltless broth)
 1/4 0 1/2 cup Magnolia Fresh milk
 1 small tin chop button mushroom ( I use around 1/8 to 1/4 cup)
 slice or grated cheese
 3 pcs puff pastry
 1 small potato (dice and parboil for the soup)
 1 gloves garlic
 1 egg (for eggwash which is just scramble egg)
 salt and pepper to taste


Procedure:

1). Melt butter and then add garlic, saute
2) afterward add button mushroom ( set aside the juice)
3) add the sexy chix ( set aside the broth) saute.
4. Afterward add the old purpose flour saute until absorb by meat and add around the fresh milk saute then add the juice of the button mushroom to desire thickness of the sauce. (picture below).  Add salt and pepper or chicken powder according to your taste


5. while waiting it to cool parboil the dice potato until tender (picture below)


                                           For the chicken pie
1).  roll the puff pastry with dusting of flour in the rolling pin and pastry, (picture below)


2).. Put about 1-2 tablespoon of the chicken filling to the pastry and fold it in half and seal the edges with a fork and brush with egg wash( picture below)

3). you can either fry it or bake it at around 200-250 for 10-15 minuter until golden brown. Since it's just 1 piece I use the turbo broiler to bake so I have to brush the other side again with egg wash in order to balance the color of the pie



                          For the rice topping

1) put cook rice in an oven dish then top with the chicken mixture equally on top then add slices or grated cheese (Magnolia Quick melt cheese is much better but since they have no small packet I use the Eden cheese)


2). broil it until cheese bubble and turn golden brown. (Picture below)


                                Chicken soup with pastry

1).  Add the rest of the sexy chix broth and some button mushroom juice to the leftover chicken mixture cook and add the parboil potato. Adjust to the creaminess of the broth and add additional milk.  Put the soup mixture into a ramekin dish then top with puff pastry
2).  Poke a hole into the pastry so that the steam from the soup will be release
3) brush again with eggwash and broil it until the pastry is golden brown. (picture Below)


 Now this is a complete meal a main course, a soup and a snack all in 1 small can of Sexy Chix. That is why SMPC products are Masarap, Masustansya at Kayang-kaya sa bulsa.
